Ok, so two days ago I cooked minestrone… everything from scratch…. IT WAS GREAT!!! Best I have ever tasted. I only tweaked one part of it because I knew it would be tastier on the tongue if I did it this way.
Here is the recipe with my tweaking 🙂
Hale & Hearty Minestrone Soup
Makes 6-8 servings
2 tablespoons olive oil
4 cloves garlic, finely chopped
1 medium yellow onion, chopped
6 cups vegetable broth or water ( I did 4 cups veggie broth + 2 cups water with two chicken bullion cubes.)
1 cup thinly sliced Savoy cabbage
1/4 cup tomato paste
1/4 cup chopped parsley
1 tablespoon chopped basil
2 large stalks of celery, sliced
2 medium carrots, peeled and chopped
1 dried bay leaf
1 (28-ounce) can chopped tomatoes, with their liquid
1 cup canned chickpeas, drained ( I did not use these)
1 cup dried fusilli pasta (I used shells and more than a cup)
1 (15-ounce) can cannellini or white beans, drained ( I also added a can of kidney beans similarly)
Salt and pepper to taste
3/4 to 1 cup grated Parmesan cheese
In a large stockpot, heat oil over medium high heat. Add garlic and onions and cook until translucent.
Now add the broth, cabbage, tomato paste, parsley, basil, celery, carrots, bay leaf, and tomatoes along with their juice and cook for 30 to 40 minutes, until the vegetables are cooked tender.
Add chickpeas, pasta, and beans at the very end, and simmer for another 20 minutes. Season with salt and pepper according to your taste.
Ladle soup into bowls and serve with Parmesan cheese sprinkled over the top. You can also add some garlic croutons for more flavor.
It’s a great recipe! enjoyed it greatly. Tonight I am fixing something of a Mexican lasagna of sorts I suppose. Don’t really know, I will let everyone know how it turns out later I suppose. Today I went and got my membership at 24Hour Fitness, I am really excited to start classes and have them kick my butt!! I have to go to Seattle tomorrow and get my passport redone. I was suppose to do that today, but I changed it to tomorrow because I think they are going to need more information than I have at the moment. But, tomorrow I am taking a bus into Seattle and getting it taken care of 🙂 It’s going to be a fun day most likely. Book in hand, iPod, change, and all the info I need to get this stupid passport done over AGAIN! They spelled my first name wrong when they redid my with the name change after the wedding. sigh…
I think I’m going to go down to the docks to read for a bit. Or at least out of the house 🙂
